    Pizza Fatty

     

    Ingredients:

    1 lb sausage

    1 lb bacon

    ¼ red onion

    ¼ red pepper

    ¼ green pepper

    1 cup Mozzarella cheese

     ¼ Cup of pizza sauce

    1 Tbsp minced garlic

    2 Tbsp olive oil

    Veterans Q Chicken & Pork Rub

    Veterans Q Original Barbecue Sauce

     

     

     

     

    Directions:

    1. In a large skillet cook the onions, peppers, garlic, and olive oil over medium-high heat for 5 mins just to soften up the vegetables.  Set aside after cooking
    2. Put the sausage in a large freezer bag, remove all the air out of the bag, and seal it up
    3. Press the sausage and smooth it out so that it is evenly spread out throughout the bag.  Set it aside
    4. Take a large piece of parchment paper or clear wrap and place it on the counter
    5. Make a bacon weave on top of the parchment paper or clear wrap
    6. Sprinkle the bacon weave with Veterans Q Chicken & Pork rub
    7. Remove the sausage from the freezer bag by cutting all four (4) edges of the freezer bag and placing it on top of the bacon weave
    8. Sprinkle the sausage with more Veterans Q Chicken & Pork rub
    9. Place ½ of the cheese on top of the sausage
    10. Now add the onion and pepper mix on top of the cheese and sprinkle with more Veterans Q Chicken & Pork rub
    11. Take the pizza sauce and drizzle it over the onion and pepper mix
    12. Top that off with the other half of the mozzarella cheese
    13. Roll up the sausage and make sure that it is tight
    14. Sprinkle the entire fatty with more Veterans Q Chicken & Pork rub
    15. Now start your smoker for indirect cooking and to a temperature of 325 degrees
    16. After the smoker is set, place the fatty on the grate for indirect cooking
    17. Cook for 2 to 3 hours or until the internal temperature is 165 degrees F
    18. After the internal temperature is 165 degrees F, brush Veterans Q Original Barbecue Sauce over the entire fatty and continue to cook for 10 minutes
    19. Take the fatty off the grill and let it rest for 10-15 mins in a foil tent.
    20. After resting, slice into ½ to 1 inch slices

     

    Tips:

    • You can cook using any cooking appliance; i.e. smoker, grill, or oven
    • You can add any “toppings” inside of the fatty as you please
